Contrary to what you may have heard in the 80’s & 90’s, one needn’t be concerned about the cholesterol in eggs. Actually it is trans fatty acids, like partially hydrogenated vegetable oil, that should be avoided.
Egg whites are full of protein, but the YOLK is where the vitamins & nutrients are found. Vitamins B, A, D, K, & E, Omega3, & DHA. And don’t overcook them or they lose up to 50% of their nutritional goodness. 🥚
